How do you deal with pressure or stressful situations?

Whenever I face a situation where it is very stressful, I try to calm down. I experienced many cases that I often felt regretful after I vented my emotions. I think it is the best way to just count 10 before blowing off steam. If I take a deep breath and be patient for a few second, my anger will die down or die away by itself. However, I often blow up without staying calm for a few seconds. This is matter of a few seconds. If we can let time lapse 5 to 10 seconds when we are about to blow up, everything will be fine. When our anger goes down the peak, we can think more logically and manage the situation better. Our rationality will come back and we can have discussions in a calm manner and reach a reasonable decision. When we get angry and vent out our emotions, we often say words that can hurt others and bring in irrecoverable consequences. We cannot withdraw it once it slips out of our mouth and it can leave a permanent wound in someone's heart. How many times did we regret it?
